Lemon Loaf

Ingredients

Lemon Loaf Cake:

  • 1 ½ cup all purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1 cup granulated sugar

  • 1 cup unsalted butter (softened)

  • 2 teaspoons vanilla extract 

  • 3 large eggs (room temp)

  • 2 tablespoons vegetable oil

  • ¼ cup milk (room temp)

  • 2 tablespoons fresh lemon juice (~1 lemons)

  • 2 tablespoons fresh lemon zest (~2 lemons)

Lemon Icing 

  • 1 cup powdered sugar

  • 1-2 tablespoons fresh lemon juice (~½-1 lemon)

  • 1 tablespoon of milk OR 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350 degrees Fahrenheit 

  2. Grease loaf pan 

  3. Mash together butter and sugar until smooth in a large bowl

  4. In a medium bowl, mix together eggs, milk, oil, lemon zest, lemon juice, and vanilla and set aside 

  5. Pour 25% of wet ingredients into the butter and sugar mixture and combine

  6. Add in flour, salt, and baking powder and combine

  7. Pour in the remaining wet ingredients and mix until smooth

  8. Pour into a greased loaf pan and cook at 350 degrees Fahrenheit for ~1 hour

  9. Stick a toothpick or knife into the loaf. If there is no batter on it when it comes out, the loaf is done cooking

  10. After cooking, let loaf cool IN the pan for at least 45 minutes

  11. When the loaf is cooling, combine powdered sugar, lemon juice, and heavy cream to make the icing

  12. After the loaf is completely cooled, take it out of the pan and drizzle icing on top

  13. Enjoy!
