Snickerdoodle Cookies with Apple Pie Filling

Ingredients

Cookies:

  • 1 cup unsalted butter (softened)

  • 1 ½ cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 2 ¾ cup all purpose flour 

  • 1 teaspoon cream of tartar

  • ½ teaspoon baking soda

  • 1 teaspoon salt 

Cinnamon and Sugar:

  • ¼ cup granulated sugar

  • 1 ½ tablespoons cinnamon

'Apple Pie Filling:

  • 3 Large Apples (Cut into squares)

  • 1 ½ tablespoons butter 

  • ¼ cup granulated sugar

  • ¼ cup light brown sugar

  • ⅛ cup lemon juice 

  • 2-3 tablespoons of cornstarch

  • ½-1 teaspoon of cinnamon 

  • ¼-½ teaspoon of nutmeg 

Instructions

  1. Mash together butter and sugar in a large bowl

  2. Whisk in eggs and vanilla until fully combined

  3. Mix together flour, cream of tartar, baking soda, and salt

  4. Pour dry ingredients into wet ingredients and whisk until fully combined

  5. Let chill in fridge for ~20-30 minutes

  6. Preheat oven to 350 degrees Fahrenheit

  7. Roll each piece of dough in cinnamon sugar and transfer to parchment paper or oiled pan 

  8. Bake for 14-20 minutes at 350 degrees depending on the cookie’s size

  9. Make indents into the center of a cookie with a metal spoon

  10. Let the cookies cool and set aside 

  11. Melt butter into a sauce pan

  12. Pour in apples and stir until coated with butter

  13. Mix together lemon juice and cornstarch and add into the pan

  14. Stir together until combined

  15. Add both sugars and spices into pan and stir until the mixture is fully combined

  16. Let the filling thicken on the stove on low heat for around 5 minutes (if the filling is not thickening enough, add 1 more tablespoon of cornstarch)

  17. Pour filling into a glass bowl and let cool

  18. When everything is cooled, pour 1-2 spoonfuls of apple pie filling onto the snickerdoodle cookies

  19. Add a drizzle of caramel on top (optional)
