Snickerdoodle Cookies with Apple Pie Filling
Ingredients
Cookies:
1 cup unsalted butter (softened)
1 ½ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 ¾ cup all purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
1 teaspoon salt
Cinnamon and Sugar:
¼ cup granulated sugar
1 ½ tablespoons cinnamon
'Apple Pie Filling:
3 Large Apples (Cut into squares)
1 ½ tablespoons butter
¼ cup granulated sugar
¼ cup light brown sugar
⅛ cup lemon juice
2-3 tablespoons of cornstarch
½-1 teaspoon of cinnamon
¼-½ teaspoon of nutmeg
Instructions
Mash together butter and sugar in a large bowl
Whisk in eggs and vanilla until fully combined
Mix together flour, cream of tartar, baking soda, and salt
Pour dry ingredients into wet ingredients and whisk until fully combined
Let chill in fridge for ~20-30 minutes
Preheat oven to 350 degrees Fahrenheit
Roll each piece of dough in cinnamon sugar and transfer to parchment paper or oiled pan
Bake for 14-20 minutes at 350 degrees depending on the cookie’s size
Make indents into the center of a cookie with a metal spoon
Let the cookies cool and set aside
Melt butter into a sauce pan
Pour in apples and stir until coated with butter
Mix together lemon juice and cornstarch and add into the pan
Stir together until combined
Add both sugars and spices into pan and stir until the mixture is fully combined
Let the filling thicken on the stove on low heat for around 5 minutes (if the filling is not thickening enough, add 1 more tablespoon of cornstarch)
Pour filling into a glass bowl and let cool
When everything is cooled, pour 1-2 spoonfuls of apple pie filling onto the snickerdoodle cookies
Add a drizzle of caramel on top (optional)
